I’ve been bitten by the green goblin…πππ Seems like Green is my favourite colour this season. Here are my “green gram/ mung bean and spinach” pancakes. I’ve named them “Green-Protein Pancakes.”
I’ve tried many a thing in my relentless pursuit of making my six year old eat her greens. This was a last ditch effort, but it bore fruit. It has greens and is also high protein. And thankfully, my daughter loved it.
Attention: Dairy Alert! Egg Alert!
“Green-Protein” Pancakes – Spinach, coriander, green chillies and soaked green gram, pureed, with rice flour, ginger-garlic paste, eggs, a little fresh cream and salt to taste.
It has butter and Cream cheese to go with it.
It’s a sure-shot way of making your kids have their greens. My little one got all excited about the vibrant green colour and ate it. She even asked me to send it for her tiffin to school, so that she can show it to her friends.
